Kale and Quinoa Salad

Ingredients You'll Need
2 tbsp. lemon juice
2 tbsp. vegan or regular mayonnaise
2 tbsp. extra-virgin olive oil
1 tbsp. dijon mustard
¼ tsp. kosher salt
5 cups thinly sliced Tuscan or regular kale
2 cups cooked warm quinoa
¼ cup chopped smoked almonds
Directions
Make the dressing: In a large bowl, whisk together the lemon juice, mayonnaise, oil, mustard, and salt.
Thoroughly toss the kale with the dressing.
Toss the quinoa with the dressed kale, and sprinkle with the almonds.
