Why I Love This Recipe
Not quite sure where I got this recipe, it could be Hungarian, but I love it on brown bread.
Ingredients You'll Need
- 225 grams cottage cheese or fresh ewe's cheese
- 100 grams soft salted butter
- 1 tablespoon hot French mustard (Grey Poupon)
- 2 teaspoons mild paprika powder
- 2 à 3 anchovy filets, finely chopped
- 2 teaspoons capers, drained and chopped
- 2 teaspoons caraway seed, crushed
Directions
1 Drain the cheese and keep the liquid
2 Press the cheese through a colander
3 Mix thoroughly with the butter
4 Add mustard, anchovy, paprika powder, capers and crushed caraway seeds, mix again
5 Add salt to taste
NB. If the mixture turns out to be to thick, add a dash of beer or some of the drained cheese liquids
