Italian Fried Rice

This dish has a mellow tartness paired with a delicate sweetness from the tomatoes. Don't let the pungent odor of the cooking vinegar compromise your taste palate as the actual flavor is not nearly as strong. This dish is not even as strong in balsamic flavor as a balsamic vinaigrette would be.
Ingredients You'll Need
- 1 Carton of sweet grape tomatoes. The sweeter the better.
- 2 tsp. Course Garlic salt
- 1 c. dry/uncooked Minute White Rice (or rice of choosing)
- 1/8 c. Olive oil
- 1/8 c. Balsamic vinegar
-1/8 c. feta cheese
Directions
Heat a small nonstick pan on medium low heat. Add olive oil to the pan. Boil water for rice according to directions
While pan and water heat up, cut grape tomatoes into thirds.
Add 1 tsp. garlic salt to the olive oil in the pan. If it lightly sizzles, it is hot enough to add the tomatoes.
Sauté tomatoes until they pop and create a sauce.
Add 2 tbsp. Balsamic vinegar. Allow tomato sauce to simmer for 5 min.
Add 1 c. rice to the boiling water, stir until rice is covered, cover with a lid and remove from heat. Let sit for at least 5 min.
When sauce has thickened, reduce heat to low. When rice is tender, add 1.5 c. of cooked rice to the tomato sauce and stir until rice is no longer white.
Turn off heat and add the feta cheese and mix.
Serve as a side dish or on top of a salad, it pairs well with my Basic AF Balsamic Salad and typically how I eat this dish. You can also substitute spaghetti or pasta instead of the rice.
