Everyone tends to love the Girl Scout thin mints, and this recipe gets awful close to making them at home.
Ingredients You'll Need
1 pound of melting chocolate such as Ghiradelli chocolate chips, since they tend to melt really well.
One box of round buttery crackers such as Ritz
1 teaspoon of Peppermint extract
Directions
What we're going to do here is to melt the chocolate in either a double boiler, or on the stove with VERY low heat
Once the chocolate is melted stir in the peppermint extract
using two forks, dip the crackers into the chocolate and fully cover all sides
place the cookies on a parchment lined cookie sheet, and slide them into the freezer for about 5 minutes to set.
