Grilled Tomatoes with Basil and Parmesan

Why I Love This Recipe
This is a great easy and tasteful side dish to compliment any main entree. Good with an omelet for brunch too! Enjoy!
Ingredients You'll Need
2 cloves garlic -- minced and crushed to a paste
20 fresh basil leaves -- finely chopped
1 tablespoon extra virgin olive oil
1/4 cup parmesan cheese -- finely grated
1 pound tomatoes -- 2 large
salt and pepper
Directions
Cut tomatoes in half crosswise and squeeze seeds out.
In a small bowl, combine the garlic paste, basil, olive oil, salt and pepper to taste, parmesan cheese and spoon the mixture into the tomato halves, fitting it into the little openings where there were once seeds. (I use a motar and pestle to make garlic paste and then add remaining ingredients and mix well).
Grill the tomatoes, flat side up, on a hot grill for 15-20 minutes or until they soften and you see them bubbling. Can also be broiled in oven.
Makes 4 side-dish servings.
