Green Beans with Toasted Almonds

Ingredients You'll Need
1 pound green beans
1/2 cup almonds
2 Tablespoons olive oil
Salt to taste
Pepper to taste
Boil water in a medium sized pot.
Prepare the green beans by cutting off the ends and slicing any large pieces in half. Boil for 5 minutes, drain, and set aside.
While the green beans are boiling, chop the almonds into small pieces and dice the shallots.
Heat 1 Tablespoon olive oil in a medium pan over low-medium heat. Add the almonds and stir continuously for 2 minutes. Set aside.
Increase the heat to medium-high and add the second Tablespoon of olive oil. Stir in the shallots and cook for 2-3 minutes. Then add the green beans and stir for another 2 minutes.
Remove from heat and add salt and pepper to taste. Serve immediately, topped with the almonds.
