"Quick Coffee Cake"
Serves | Prep Time | Cook TimeWhy I Love This Recipe
Granma Schmit for years made this coffee cake for all of her family. She would make these coffee cakes and then get in her car to deliver them out to the farms, so that everyone would have this cake for Sunday morning after mass. I know she sent them in to Omaha as well. If you stopped in to see Grandma, chances were good she would have this coffee cake waiting for you.
Ingredients You'll Need
1/2 cup margarine or butter
1 cup sugar
2 eggs
1 tsp. vanilla
1 cup sour cream
2 cups flour
1 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
Directions
Cream margarine/butter and sugar very well until light and fluffy.
Add vanilla.
Beat in eggs one at a time.
Add sifted dry ingredients in thirds alternating with sour cream, beating until smooth after each addition.
Spread half the mixture in greased 9x13 inch pan.
Mix the topping: 1/3 cup brown sugar, 1/2 cup white sugar, 2 tsp. cinnamon and one cup chopped nuts. Sprinkle one half on the first layer. Cover this with the remaining batter and sprinkle on evenly the rest of the topping.
Bake at 350 degrees for 40 minutes.
