"Grandma wasn't Italian, but that's what she called these"
Serves 5 | Prep Time 15 - 18 minutes | Cook Time 35 minutes +Why I Love This Recipe
My mother would make this style beans when I was young and she always called it grandma's Italian beans. I never really thought about it, but we didn't have an Italian Grandmom! But they sure are yummy and they're a hit around the holiday's because of the bright green of the beans and the red of the diced tomatoes. It's a wonderful side.
Ingredients You'll Need
1 - 1.5 pounds of fresh green beans
1 small onion
3 slices of bacon
3-4 cloves of garlic
1 - 14 ounce can of diced tomatoes
1 tablespoon of olive oil (more if you like)
Salt to taste
Pepper to taste
Directions
We start by cleaning the beans. We cut off both ends, and depending on how long they are, we cut them in half or even 3 pieces.
Next up we dice the onion
thinly slice the garlic cloves
Place the beans in boiling water and cook until tender but not mushy soft.
As the beans are boiling, put your olive oil in a large deep frying pan set to medium heat.
put your bacon slices in the pan and cook until just shy of crispy.
remove the bacon to a plate, and dump your onions in the bacon fat/olive oil
Cook the onions until translucent and soft. Then toss in your sliced garlic. Cook for another 3 - 4 minutes
Drain the cooked beans through a colander, and dump them in the pan.
cut the cooked bacon into half inch pieces, and add to the pan
Drain the can of diced tomatoes and add to the pan.
