Golden Butternut Squash Soup

This is a health soup ideal for diabetics. Easy and delicious
Ingredients You'll Need
1 tsp canola oil
1 small onion, minced
1 carrot, peeled and diced
2 10 oz packages butternut squash thawed
1 cup low fat reduced sodium milk
1 tsp. nutmeg
Fresh ground pepper to taste
Directions
In a stockpot over medium high heat, heat the oil.
Add onion and saute for 3 minutes
Addd carrot and saute another 3 minutes
Add butternut squash and broth and bring to a boil
Add milk and simmer on low heat for 20 minutes
Add the nutmeg, In batches, puree the soup in a blender until smooth.
Add pepper to taste
Serve immediately
