Gluten Free Diet-Lemonade Pork

"Healthy, Low Sugar version of Sweet and Sour Pork"

I love this recipe. It is like sweet and sour pork however without the sugar and is delicious. It is based on a Slimming World Recipe in their Comfort Zone book, however I found it a bit fiddly and so have removed some steps.
Soy sauce usually contains wheat however you can buy gluten free versions in most supermarkets in the Free From sections.
Ingredients You'll Need
1 large onion, cut into bite sized pieces
250g carrots, cut into batons
600g lean pork fillet, cut into bite sized pieces
Low-calorie cooking spray
4 tablespoons tomato puree
4 garlic cloves, crushed
3cm piece of fresh root ginger, peeled and grated
2 tablespoons gluten free soy sauce
1 tablespoon rice vinegar
1 gluten free stock cube
1/4 tsp Chinese five-spice powder (check ingredients for gluten
500ml diet lemonade
3 medium courgettes, halved lengthwise and thickly sliced
275g fresh pineapple cut into chunks (tinned pineapple in juice is fine too)
Directions
Spray a non stick pan with low calorie cooking spray and place on a high heat. Add pork, onion and carrots and stir fry for 6 minutes or until pork is no longer pink
Add tomato puree, garlic, ginger, soy sauce, rice vinegar, Chinese five-spice and lemonade. Sprinkle in the stock cube and stir well. Half cover and simmer for 10 minutes, stirring occasionally .
Add courgettes, part cover and cook again for 10 minutes until sauce has reduced a little and the pork is cooked.
Add pineapple chunks and heat through. Serve.
