Garlic dip (aliada) from Cephalonia with fried cod

Why I Love This Recipe
Step 1: Prepare the fish. Remove the fish and bones from the fish and boil in water for 15 minutes. Strain and save the stock for later. Heat the olive oil in a frying pan. Sprinkle the cod with a little pepper and flour it. Place the cod in the frying pan and fry each side for 4-5 minutes, depending on how thick the fish is. After that, allow it to drain its excess oil on a kitchen roll.
Step 2: Prepare the garlic dip. Crush the cumin in a mortar. Add the garlic with a little salt and pulp it until it becomes a soft mush. Place the potatoes in the mortar and beat them to a pulp too, while pouring in the elixir and olive oil, one after the other. To make it softer and tastier, just add a little fish stock.
Step 3: This food is traditionally served in a deep dish. First place the cod and then top it with the aliada.

6.4 tbsp olive oil with orange
