Ingredients You'll Need
6 Fish Fillets
3/4 cup All-Purpose Flour
3/4 tsp of Garlic Powder
1 tsp of Salt
3/4 tsp of Ground Black Pepper
3 cups of crushed Saltine Crackers
Vegetable Oil for Frying
Check the fillets to make sure all bones and skin have been removed, then cut the fillets into manageable pieces, if necessary.
Next beat the eggs and set aside for later.
Combine the flour, garlic powder, salt, and pepper into another bowl.
Put the crushed saltine crackers into a third bowl.
Now preheat the oil to about 375 degrees Fahrenheit.
Now dip the fillets into the flour mixture, then the egg wash, and then the cracker crumbs and set fillets aside on a plate.
Test the oil: drop a pinch of cracker crumbs into the oil, and if it crackles and pops then it's ready.
Carefully lower 2 fillets away from you into the oil, and cook until golden brown, about 3 minutes on each side.Transfer to a paper towel-lined plate and repeat with remaining fillets.
Serve with lemon wedges.
