FRIED PATTIES CHICKEN, TURKEY, RABBIT OR DUCK BARB FANKHAUSER STYLE

Why I Love This Recipe
My mom made these (she never made rabbit I did) not just for sandwiches she'd sometimes serve it w/ mashed potatoes and gravy ect
Ingredients You'll Need
Ground up, canned or leftover chicken, turkey, rabbit or duck
Celery diced or sliced very thin
Onion diced
Parsley flakes
Garlic powder
Salt
Pepper
Eggs
Whole milk (preferably organic!) or Almond unsweetened milk (just a splash or 2 don't want mix to be runny wet!)
Opt: Pinch of sage, or poultry seasoning
Opt: Can add a bit of paprika or seasoning salt too if you like
Unseasoned bread crumbs (Panko) or regular seasoned bread crumbs if you prefer
Opt: Instead of bread crumbs chop up either stove top stuffing mix and/or garlic butter croutons in food processor
Oil for frying
Sandwich bread or buns if making them for sandwiches
If making sandwiches you can add lettuce, tomato ect to the bun w/ some mayo (Miracle whip for Northerners or Hellman's for Southerners)
Directions
Mix it all up together so that it holds its shape when rolled into a ball then smash dwn into a patty fry in oil not too much, not too lil you don't want the frying pan to get too dry. Don't let oil get to hot either!
*NOTE: This can be made into a loaf too! Preheat oven to 350 F grease baking pan don't just have to be bread pans can do squares or rounds too. Add a lil milk or water over top if baking it. It'll absorb it...
