An old Irish recipe that we thought was passed down from ancestors but really came in the mail with the gas bill to my grandmother in the 50s.
Ingredients You'll Need
2 cups sifted flour
1/3 cup sugar
1/2 tsp salt
1 1/2 tsp baking powder
1/2 tsp baking soda
1/2-1/3 cup raisins
1 egg
2/3-1 cup buttermilk
1 tsp melted butter
Directions
Sift together flour, salt, sugar, baking powder and baking soda into a bowl.
Add raisins and beat egg lightly
add 2/3 cup of buttermilk, and butter
stir into dry ingredients and mix just until moistened throughout.
If necessary, add enough buttermilk to make a stiff dough which clings together.
Turn onto a floured surface and knead lightly 8 or 10 times.
Shape into a ball and flatten
Place on a greased baking sheet or in loaf pan.
Bake at 400 degrees for 40-50 minutes or toothpick comes out clean.
