Ingredients You'll Need
1 head cauliflower, separated
1 t basil (+)
1 C water
1 t oregano (+)
1 1/2 t salt, divided
2 cloves garlic, pressed
1 stick butter
Juice of 1/4 lemon
1/4 t coarse ground pepper
3 medium zucchini, 1/2” slices
1/2 C grated parmesan cheese
Directions
In skillet, poach cauliflower in water with ½ t salt, about 5 minutes. Pour off water; remove flowerets. Melt butter in skillet; stir in seasonings, including the other teaspoon of salt. Add zucchini first, then cauliflower. Cover. Cook on low heat for 10 minutes, stirring occasionally. Toss with ½ c Parmesan cheese before serving.
