Citrus Crab Tostadas with a Coriander-Avocado Coulis

Why I Love This Recipe
Got this from Domaine Carneros and it is fresh and delicious!
Ingredients You'll Need
1/2 lb Dungeness crab meat
1 lemon - zest and juice
1 tsp red bell pepper - finely chopped
2 Tbl scallion - chopped
1 Tbl fresh cilantro leaves - chopped
1 Tbl grapeseed oil
1 tsp salt
4 corn tortillas
1/4 cup oil for frying
2 soft avocados
2 tsp lime juice
1/2 Tbl grapeseed oil
1/4 tsp toasted ground coriander
salt & pepper to taste
Directions
Mix together crab, lemon juice & zest, red bell pepper, chopped scallion, chopped cilantro, grapeseed oil and salt in a bowl. Cover and refrigerate for approximately 20 minutes.
For coulis, in a bowl mix together the avocados, lime juice, grapeseed oil, salt, pepper and coriander until smooth.
Cut each tortilla into three two inch rounds (a Mason jar lid works great).
Fry tortilla rounds in hot oil until golden brown, drain on a paper towel and cool.
TO SERVE: Place fried tortilla rounds on a plate and spoon equal amount of crab mixture on each tortilla. Top tortilla with coulis and garnish with cilantro leaves.
