Cinnamon Raisin Bars

Why I Love This Recipe
This is my own version of a recipe I got from a friend years ago.
Ingredients You'll Need
Crust
1/2 cup butter (1 stick), softened
1 cup brown sugar, packed
1 1/2 cup flour
1/2 tsp baking soda
1/2 tsp salt
1 1/2 cup rolled oats
Filling
1/4 cup sugar
1 Tbsp cornstarch
1 cup apple juice or cider
1 tsp cinnamon
Icing
1 cup powdered sugar
1/4 tsp cinnamon
1 Tbsp milk (approximately)
Directions
Preheat oven to 375 degrees.
In a large bowl, cream the butter and brown sugar.
Add the flour, soda, and salt; stir until well combined.
Stir in the oats and 1 Tbsp water. Mix well.
Pat half of the crust mixture into the prepared pan.
In a saucepan, combine the sugar and cornstarch.
Slowly stir in the apple juice and cinnamon. Stir until well combined.
Add the raisins.
Cook over medium heat until thickened and bubbly, stirring frequently.
Spoon the filling over the crust in the pan.
Spoon the remaining crust mixture evenly over the filling. Pat it down lightly with the back of a spoon.
Bake for 25 to 30 minutes or until the crust is golden brown.
Cool on a wire rack.
Make the icing in a small bowl by combining the cinnamon and powdered sugar; stir in the milk a little at a time until it reaches a drizzling consistency. Drizzle over the cooled bars. Cut into bars.
