Chicken Yakitori

Ingredients You'll Need
4 oz Dark Soy Sauce
4 oz Sake
1 oz Granulated Sugar
4 Chicken Breast (approx. 2 1/2 oz each)
1/2 TBSP Cornstarch
1/2 TBSP Sesame Seeds (or to taste)
Directions
1) Combine the soy sauce, sake, and sugar. Set aside 4 oz of the mixture for step 3.
2) Brush the chicken with the remaining soy sauce mixture and place on baking sheet. Place baking sheet in a salamander with the heat set to medium, for that perfect char. Leave chicken in for 10 minuets and flip. Leave for another 5, then take out to allow resting period.
3) To make the sauce, combine 1 fluid oz of the soy sauce mixture with the cornstarch. With the other 3 oz of remaining sauce, bring to boil in a saucepan, then stir in cornstarch slurry. Stirring constantly, continue boiling until the sauce thickens, simmer for 1 minute.
4) Slice each chicken breast in 1 inch pieces. Serve each breast in a fanned-out fashion with a small amount of sauce. Garnish with sesame seeds.
