Chicken & Dumplings
Why I Love This Recipe
Mom would often make this family favorite....true comfort food and bisquick dumplings are the best.
Ingredients You'll Need
1 cut-up whole chicken skin removed (3 to 3 1/2 lb)
3 medium stalks celery), cut up (about 1 cup)
2 medium carrots, sliced (3/4 cup)
l medium onion
1 TBS chopped fresh parsley or 2 tsps parsley flakes
1 tsp salt
1/8 tsp pepper
Optional seasonings celery salt, onion powder, or anything you like
5 cups water
Chicken Better than Boullion (in soup section) to enhance flavor
2 cups Original Bisquick™ mix
2/3 cup milk
In 4-quart Dutch oven, place chicken, salt, pepper and water. Cover; heat to boiling; reduce heat. Simmer about 1 hour or until juice of chicken is clear when thickest part is cut to bone. Add , celery, carrot, onion, parsley and cook for 20 more min.
Remove chicken and vegetables from Dutch oven. Add Better than boullion to taste. Thicken with flour/water or bisquick/water. Once boiling, add chicken and vegetables back to pot. Reduce heat but still bubbling slightly
In medium bowl, stir remaining 2 cups Bisquick™ mix and the milk with wire whisk or fork until soft dough forms. Drop dough by spoonfuls onto hot chicken mixture (do not drop directly into liquid). Cook uncovered over low heat 10 minutes. Cover and cook 10 minutes longer.
