Chicken, Spinach, and Gouda Crustless Quiche

Ingredients You'll Need
2 TBSP Kerrygold butter
2 TBSP diced onion
1 - 12 oz package frozen spinach (thawed and squeezed of liquid)
5 eggs (beaten)
1 1/2 cup heavy cream
1 tsp salt
1/2 tsp black pepper
2 cups smoked gouda (shredded)
1 rotisserie chicken (shredded)
Shred the chicken and set aside.
Heat the butter in a small skillet over medium heat. Saute the onion until it is translucent, about 6-8 minutes.
Preheat the oven to 375. Spray a pie pan with cooking spray.
To the shredded chicken, add all of the remaining ingredients. Stir until combined, then add to pie plate.
Bake in the preheated oven for 35-45 minutes, or until the eggs are set. Cut into 6-8 pieces and serve.
