Carrot Raisin Loaf Cake

Why I Love This Recipe
I got this recipe at a recipe exchange when we lived in rural Minnesota. I think it is more like a quick bread (like banana bread) than a cake, but it is good.
Ingredients You'll Need
1 cup sugar
3/4 cup vegetable oil
2 large eggs
1 1/2 cups grated carrots
1 tsp vanilla
2 cups flour
1 tsp (rounded) baking soda
1 tsp cinnamon
1/2 tsp baking powder
1/2 tsp salt
1 cup raisins
2/3 cup chopped walnuts
2 tbsp. sugar
1/2 tsp cinnamon
Directions
Preheat oven to 375 degrees F.
Grease and flour a loaf pan (9 X 5 inch)
In a medium bowl, combine flour, soda, cinnamon, baking powder, and salt. Set aside.
In a large bowl, mix the sugar, oil, and eggs. Beat until well combined.
Stir in the carrots and vanilla.
Add the dry ingredients and the raisins and nuts. Stir until combined.
Turn batter into the prepared pan.
Mix the 2 tbsp. sugar and 1/2 tsp cinnamon and sprinkle over the batter.
Bake for 1 hour or until a toothpick inserted in the center comes out clean.
Cool in pan on a rack for about 5 minutes. Remove from pan and cool cake on rack.
