My mom would make this and it was my favorite over linguini a wide spighetti . I would love to dip the bread in the sauce.
Ingredients You'll Need
4-pound spring chicken cut into pieces (can use chicken pieces but with bone to give more flavor
1 tsp clove of garlic finely chopped
1/2 cup flour
1 tsp salt
1/4 cup shopped onion
1 garlic clove chopped fine
1/4 cup chopped carrotts
3 springs of parsley
1 bay leaf
1 can italian style tomatoes
1 tsp salt
1/4 cup of cherry or sweet white wine
1, Dredge chicken in flour, sprinkle with salt and oil until browned on both sides. Place in coverd dish in warm place.
2. Brown onions, carrots, garlic,parsley and bay leaf in same pan.
3, Add chicken and wine and simmer for 30 minutes
4. Eat as is with sides or place over you favorite pasta. Add grated cheese if desired.

Pasta, roasted potatoes or vegetables and delicious NY.Y. Italian bread.
