Bulgur - Lentil salad with avocado and feta, with lettuce, tomatoes and almonds
Ingredients You'll Need
Prepare the vegetable broth and let it boil. Add 30 grams of lentils per person. Let cook for 25-30 minutes, stirring occasionally. Add the bulgur during the last 10 minutes.
Cut two onions in half fings and caramelize them in a pan with some butter. Let them cook for approximately 6-8 minutes or until they get golden. For the last 2-3 minutes add balsamic vinegar and a pinch of sugar. Move the opinions to a bowl and roast the almonds in the pan with the remainders and a little olive oil.
Cut 2 avocados, 3 tomatoes, and approximately 100 grams of feta into small cubes. Chop the lettuce. Mix it all in a bowl with the juice of 1 lemon.
Add the bulgur, lentils, caramelized onions, and almonds to the salad and drizzle some olive oil on top. Serve!
