Why I Love This Recipe

This another strange combo that I came up with one night while I was looking through my cupboard, trying to come up with something different for dinner. I live alone, so something like this is perfect if you're cooking for yourself - makes two meals for me.

Ingredients You'll Need

1 Boil-in-Bag package of brown rice
1 Can tuna (packed in water)
1 Bag frozen peas
Shredded Romano cheese
Lemon Juice (fresh or pre-packaged)
I Can't Believe It's Not Butter spray
Fresh-ground pepper and salt


Bring one quart of water to boil over high heat on stove. Add bag of rice to boiling water, cook thuroughly (directions are on box). While cooking rice, bring peas to boil in another pot of water. Drain peas and return to pan. Cut open bag of rice and empty into pot with peas. Add tuna and mix all three well. I use a big scoop to spoon it into a dish then generously spritz it with the butter spray and lots of salt and pepper. The trick to making this yummy and not bland - because it will be with just the butter spray and salt and pepper - is to add a lot of lemon juice, or as much as you prefer, and lots of Romano cheese. I put cheese in just about everything, so that's just my preference, but I have found that the lemon juice just gives it a really nice bite. Trust me! If you store half of this for the next, do not add lemon juice, butter or cheese until ready to heat and serve again. I have also done this with corn in addition to the peas and mung beans as well, but those take a little longer to cook
