Why I Love This Recipe
This is a different take on the Breakfast muffins that I usually make for the lunch boxes and healthy snack.
I am not sure where I got the idea from, but it all seemed to work out so well.
Though it is quite a rich and filling Pie, it was finished by mid-day, but keep in mind I have a growing very sport active 14 year old boy in the house so food generally does not last very long.
Ingredients You'll Need
1 packet Bacon
7 Large Eggs
1 Large Tomato
1 Small Red Onion
1 Cup White Cheddar Cheese
1/3 Cup Parmesan Cheese
1 Bunch of Cilantro
You can add Mushrooms, chilli or anything that you like as an additional ingredient.
Preheat oven 350 F / 180C
Prepare all your ingredients (chop, grate, cut & spray pan)
Place the bacon in the pan all around, so that it covers most of the bottom area of the pan that you are using.
Layer your tomato, onion, cheese and cilantro in the pan.
Break your eggs in the pan, making sure that they are well distributed.
Bake the Pie in the oven for 30-35 minutes. Remember all ovens are different and the cooking time might vary, so start keeping an eye on your pie from 25 minutes in to the baking process and then eyeball it from there.
Once baked, turn Pie over onto a serving place and serve.
