Blueberry French Toast: Taste of Home Recipe (winner)

Why I Love This Recipe

I love the blueberry French toast recipe because it is sweet and delicious. I like that you can make it the night before (a Christmas Eve favorite for my family) and just bake it in the morning. While it bakes, I make the blueberry sauce. I have also brought this to a baby shower brunch.

Ingredients You'll Need

12 slices day old white bread (crusts removed)
2 pkgs cream cheese (8 oz each)
1 cup of fresh or frozen blueberries (I used frozen) Buy 16 oz- need more for sauce.
12 eggs
2 cups of milk
1/3 cup maple syrup or honey

1 cup sugar
2 TBS corn starch
1 cup water
1 cup fresh or frozen blueberries
1 TBS butter or margarine


Cut bread into 1 inch cubes: place half in a greased 13x9x2 in baking dish. Cut cream cheese into I inch cubes: place over bread. Top with blueberries and remaining bread. In a large bowl, beat eggs. Add milk and syrup: mix well. Pour over bread mixture. Cover and chill 8 hours or overnight. Remove from refrigerator 30 minutes before baking.

Cover and bake at 350 for 30 minutes, Uncover, bake 25-30 minutes more or until golden brown and the center is set. In a saucepan. combine sugar and cornstarch: add water. Bring to a boil over medium heat: boil for 3 minutes, stirring constantly. Stir in blueberries: reduce heat. Simmer for 8-10 minutes or until berries burst. Stir in butter until melted. Serve over French toast 8-10 servings. (1 3/4 cups sauce).

What I did:
The above is what the recipe calls for. I actually used about 16-18 slices of regular white bread (not day old) with the crust cut off…it was about ¾’s of the loaf of white bread.
