Directions
Blackened Steak Sandwich
1) Heat a pan over high heat for 10 minuets. Pat the steak dry with a clean towel. Coat the steak in the blackened seasoning.
2) Carefully place the steak into the hot pan and ladle 1/2 oz of clarified butter over the steak. There will be a smoke flare up since the heat is high. Leave the steak on it's side for 2 minuets and allow for a black crust. Once surface has a crust, flip over and allow same process for the other side.
3) Remove the steak from the pan and hold in a warm place.
4) Chop the capers and combine the with the soften butter. Spread each slice of bread with half of the caper butter.
5) Place the bread on a baking sheet and put into the oven/salamander for 4-6 minuets to get browning on the outside.
6) While the bread is browning, cut the steak against the grain in 1/2-1 inch slices
7) Once the meat has cooled and the bread is browned, time for assembly. Assemble each sandwich by placing the slices on top of the bread, followed by the greens, tomatoes and onion.
8) Enjoy!
