Blackened Shrimp over Baked Sweet Potato with andouille sauce

10 deveined gulf shrimp
2 sweet potatoes
1/3 cup diced andouille
1.4 tsp minces garlic
1 tblsp honey
1 bunch green onions
3.4 cup heavy whipping cream
cajun seasoning
Directions
bake sweet potatoes in oven @ 350 for 1-1/2 hours
season shrimp with cajun seasoning
brown dice andouille, onions and garlic in a skillet
add cream and honey.
mash sweet potatoes
blacken shrimp on high heat approx 30-40 second on each side
place a dollop of creamed potato in bowl, spoon andouille sauce on potato and top with blackened shirimp
