Black Bean, Avacado and Corn Dip or Salad

Serves 6 as salad; many as appetizer | Prep Time | Cook Time

Why I Love This Recipe

Everyone loves this dip. The recipe makes a lot but it won't last long!

Ingredients You'll Need

1/3 cup fresh squeezed lime juice
1/2 cup olive oil
2 garlic cloves, minced
1 teaspoon salt
1/4 teaspoon+ ground cayenne pepper
2 (15 oz) cans black beans, rinsed and drained
1 1/2 cups frozen or fresh corn
3 ripe avocados - peeled, pitted, diced
1 red pepper, chopped
2 tomatoes, chopped
6 green onions, thinly sliced
1/2 cup chopped fresh cilantro


Mix lime juice, olive oil, garlic, salt, & cayenne pepper.

In large bowl, combine beans, avocado, corn, bell pepper, tomatoes, green onions and cilantro. Pour lime dressing over ingredients and mix well.

If making the day before, leave out avocado and add before serving.

Store avacado pits with salad/dip to help keep avacado fresh looking until serving
