Baked Caprese Bruschetta

Great for cocktails before dinner, or even split with a good friend as a main course with a bottle of wine and some chit-chat.
Ingredients You'll Need
1 baguette, sliced 1" thick diagonally
1 ball mozzarella, shredded or roughly torn
4 roma tomatoes, seeded and diced
1 small white onion, diced
3 tbsp olive oil
2 tbsp balsamic vinegar
1 tbsp garlic, chopped
1 cup fresh basil, chopped
salt and pepper to taste
balsamic glaze for garnish
Directions
Combine tomato, onion, basil, garlic, oil, and vinegar in bowl, cover, and refrigerate for at least 1 hour.
Preheat oven to 350F. Place baguette slices on cookie sheet and top each with bruschetta and mozzarella. Bake for 8-12 min or until mozzarella is melted and bread is beginning to crisp.
Drizzle with balsamic glaze and serve immediately.
