Annette's Orange Almond Salad

Why I Love This Recipe
I think you can never have too many salads at a potluck, and this one is deceptively simple and proves that sometimes less can be more
Ingredients You'll Need
1/2 head Iceberg lettuce - chopped
1/2 head romaine lettuce - chopped
1 c jicama peeled and diced in 1/4" pieces
1 can mandarin oranges, well drained
1 package sliced almonds
1 T butter
1 t sugar
dressing
1/2 t salt
dash pepper
2 T sugar
1 T minced fresh parsley
2 T red wine vinegar
1/4 c canola oil
Dash garlic tabasco sauce
Directions
Prepare almonds by sauteing in 1 T butter and 1 t sugar on low heat, until butter browns and sugar is melted.
Remove from heat and continue to stir until almonds are cooled. Set aside
While cooking almonds, make dressing.
Dressing
Combine all ingredients in blender, or you can use stick blender to mix well. Pour into another container and chill until ready to serve
In a large bowl, combine lettuces, almonds, jicama, and oranges.
If bringing to potluck, dress at event.
Shake dressing and toss well with all ingredients.
Serve immediately
