Aloo Masala Bombay Sandwich

This sandwich is a popular type of street food in India. I tried to make my own version at home and this is the recipe. This recipe is really easy and quick to make! All it takes is a few ingredients. The potato filling makes any boring sandwich a lot better. You can add whatever veggies that you want in your sandwich. I just included the ones I added in mine.
Ingredients You'll Need
For the Potato Filling:
2 boiled potatoes (roughly chopped)
1 tsp cumin powder
¼ tsp turmeric powder
1 green chili
½ tsp mustard seeds
Salt to taste
2 tbsp oil
Few curry leaves
For the sandwich:
Few slices of bread
Few slices of onions
Few slices of cucumbers
Few slices of tomatoes
Butter
Green chutney (optional but recommended)
Cheese (optional)
Directions
For the Potato Filling:
1. In a pan, heat the oil.
2. Add the mustard seeds and let it crackle.
3. Add the potatoes, cumin powder, turmeric powder, chili, salt and curry leaves.
4. On a low flame, mash the mixture until fully incorporated.
5. Switch off the gas. The mixture is ready.
For the Sandwich:
1. Heat the sandwich maker/griller.
2. Take two slices of bread and spread a thin layer of butter and chutney to both slices.
3. Add the potato filling and close the sandwich.
4. Place the sandwich in the griller until crispy (about 3 minutes).
5. Take out the sandwich and open it. Add the tomatoes, onion, cucumber and cheese.
6. Close the sandwich and serve!
