Welcome to Chenango Club! The Chenango Club is located in Norwich, NY, a small city in central New York State. Chenango County is very rural, with a total population of about 50,000. The Club is run by Chenango County Behavioral Health Services and is a drop-in center for people working on mental health issues. The Club provides a welcoming and non-judgmental atmosphere, opportunities for fellowship, self-expression, learning and leadership, and a hot meal five days a week at no charge. Lillian, who turned 90 in April, 2017, came to Chenango Club in 1982 and stayed to serve as the chief volunteer cook. For 35 years, Club members have enjoyed first class meals, and everyone has his or her favorites, including Lillian’s haluskis, her lasagna, and her macaroni and cheese. We believe that Lillian has served more than 9,000 meals during her years at the Club. Lillian has fine-tuned her approach to cooking for large numbers of people on a daily basis, noting that “most of my recipes start out the same”, and onions and celery (with the leaves!), finely chopped, and generous amounts of garlic feature in many recipes. Many of these recipes were handed down to Lillian from her mother. Others were tried and true dishes from the restaurant years. We realize that some of these originated in specific cookbooks, but the sources are lost to us. As these recipes have primarily been used to provide a daily meal for 30 or more people, some shortcuts in ingredients are inevitable. The bases for the spaghetti sauce, the baked beans and spiedies, for example, are store-bought and then enhanced. We acknowledge our debt to the many fine cooks who have come before us, and we hope that the recipes, and especially the ingredients and quantities, will fill a niche for those seeking to feed a large group.
