Norwegian Krumkake with Whipped CreamMy grandma Carla would make these every Christmas. It made the holidays a special time. She has been gone for many years now, and I miss her very much. We have her Krumkake iron. Similar recipes can be found online for different fillings. Familia Montoya BizcochitosBizcochitos are New Mexico’s official state cookie. They have simple yet rich flavors – cinnamon, sugar and anise – that melt in your mouth. These cookies are essential part of the Holidays. I have the most vivid memories of driving with my mom to mis abuelos (my grandparents) house and walking in the front door and being bathed in the glorious smell of these cookies. Grandma Lucy's Biscochito (Pan Dulce) CookiesBiscochitos or bizcochitos are a crisp lard- or butter-based cookie, flavored with cinnamon and anise (if desired). The name is a Spanish diminutive form of bizcocho. The dough is rolled and traditionally cut into the shape of stars and crescent moons. The cookie was developed by residents of New Mexico over the centuries from the first Spanish colonists of what was then known as Santa Fe de Nuevo México. The recipe for making the cookie has been greatly influenced not only by local and indigenous customs but also by recipes brought to New Mexico by immigrants from other Hispanic countries. Biscochitos are served during special celebrations, such as wedding receptions, baptisms, and religious holidays (especially during the Christmas season). It is commonly served along with hot chocolate. Doris Henderson's Chocolate CakeThis recipe can easily be doubled and made in a bigger pan and is an especially moist and heavy cake. (Don't forget to add a little extra water if you're baking at high altitude.) This was my paternal Grandmother's recipe, and it became my Mom's specialty.
