It sounds wrong, however is delicious This is adapted from a recipe from Fresh Fruit and Desserts, Readers Digest's East well Live Well range. Not sure it is in print anymore however I am sure you can get this book second hand
Low Fat Gluten Free Spicy ChipsThis is my own recipe, although it is loosely based on a Weight Watchers version. Being strictly gluten free limits the choice of chips as chippies generally cook chips in the same oil as wheat based products. In addition, many oven chips are coated with flavourings which contain wheat. I got fed up with this and tried making my own chips. I think these are a little bit of an acquired taste, however an easily acquired one! I now love them and do this regularly. If you love fish and chips and are strictly gluten free, you could check out the Facebook page "Gluten Free fish and chips in the UK" group as they have a list of safe places to eat. Nando's is also great as they use separate oil for chips
Gluten free Smoked Haddock Florentine with Chive MashI didn't think I was a fan of smoked fish, however I found some smoked haddock for 40p at the reduced section, brought it and then had to decide what to cook with it. After a trawl through some of my recipe books i came up with this one. It comes from the Weight watchers book "Cook, Eat and Enjoy" To my surprise i liked this recipe very much. It feels indulgent, however is not! I would recommend doubling up on the potato and keeping some for the next day. All fish should be gluten free, however worth double checking packaged fish to make sure it isn't coated or marinated in wheat.
Gluten/Lactose Free Slimmers' Orange and Banana SorbetI am not sure where I got this recipe from and I haven't made it for years. I am now trying to get all my recipes onto bake space, so tried it again. I now own an electric ice cream maker and this comes out well in this. Is truly far more healthy than normal sorbet as it has the fraction of the sugar. Please note that this contains raw egg white, which is not suitable for all people, especially those with weakened immune systems
MarshmellowsThis is a James Martin inspired recipe, seen on something like Saturday Kitchen. If you look online, you should be able to find a video of this being done. If you know how to boil sugar and make meringue, this should be simple for you, if not, master both skills separately first. (Try honeycomb as a boiling sugar step) This is great for gifts
Gluten Free Moroccan Lamb Stew with DatesI don't often cook with lamb, however my local butchers sells it and i thought it was time i cooked a new recipe. I really enjoyed this. i actually put this in the slow cooker and just left it and the meat was so tender
Gluten Free Mexican Beans and FruitThis is another recipe based on a readers digest book "Fresh fruit and desserts". As usual i have altered it slightly. This is a recent experiment for me and it certainly is different and I wasn't sure at first, however i froze it for my lunches for work and really enjoyed it. I originally used brown chick peas, instead of bortolli beans and i can't say i noticed much difference.
Gluten Free Smoked Haddock KedgereeUsually I cook a recipe twice before adding it to Bakespace, however this recipe was an instant hit for me. I had some frozen fish fillets in the freezer, 1 plaice, 1 smoked kipper and 1 haddock, so just used these. I brought all of them cheaply when reduced. Do check if you do this that they can be frozen as some have already been frozen. I also sieved the fish water and have frozen it to use as fish stock next time i cook with fish. What i loved about this was the quick and easy preparation and the delicious taste. I did find the portion sizes a bit small however. I adapted this recipe from a book called "Gluten Free and Easy by Good Housekeeping. I reduced the fat content amongst other things. if you are not that confident with gluten free, this would be a very good book to start with and it has some useful tips on Coeliac disease at the front.
Gluten Free Poached Eggs on MushroomsI have based this recipe on one in a book called "Gluten Free and Easy" by good housekeeping. This one is truly easy and a delicious brunch. The original recipe was for 4 people, however I have reduced this to make it for 1. If you want to do more, just multiply by the amount of people. Make sure you keep the mushrooms in a single layer when cooking however. This is naturally gluten free as none of the ingredients usually contain wheat, barley or rye, however you do need to check the pesto as it could potentially contain gluten. I can't see that the butter is actually needed and adds much and this is why I have said it is optional, however a bit of garlic butter would go well with this.

This is one of a series of cook books helping people to understand how simple it is to cook gluten free. Soups are great. i remember someone telling me that soups were "empty", however not the soups i make. I would particularly recommend left overs soup as a really cheap and exciting dish. I make it regularly and take it into work for my lunch. Usually full of nourishment and fibre and costing pennies.
Many people think that cooking gluten free is complicated, expensive and needs a lot of special ingredients, however a lot of food is naturally gluten free and inexpensive. This recipe book is a collection of these recipes that I have tried and loved. You still need to be careful not to accidentally contaminate gluten free food with gluten if you, or the person you are cooking for are strictly gluten free, however no need for any special ingredients.
I became strictly gluten free in September 2016 and am "Presumed Coeliac". My friends have asked me to make a recipe book so people know what to cook for me and other people who are gluten free. I like curries, so cook these a lot, hence why it is the first recipe book to be published. I was going to allow free downloads, however have decided to ask a small amount and donate this to the Coeliac UK Please note, I am based in the UK, so will be using UK measurements throughout. I also am not an original cook, so most of my recipes have come from a recipe book originally. When I know which one I got it from, I will acknowledge this.
