Slow Cooker Chicken Taco SoupThis is a frequent ‘go to’ of mine! It is SO EASY and delicious. When I buy chicken, I separate and freeze 3 chicken breasts at a time, so I can easy make this any time I get in a pinch. I mean the only thing you have to do, is chop an onion! My Mom’s (aka GrandMollie’s) Breakfast CasseroleI am super traditional!! I make my Mom’s (aka GrandMollie’s) breakfast casserole EVERY Christmas morning!! It’s nice because you can make it ahead of time, refrigerate, & just throw it in the oven Christmas morning. It can cook & smell up the house while everyone opens gifts! I also serve it with fruit salad (which I will send the recipe for), store bought cream cheese Danish or something sweet, & Poinsettia mimosas (champagne & cranberry juice). Streusel In-Between Pumpkin CakeMy Tips: I like to give this as Christmas gifts. Instead of a Bundt pan, I use two 9x5 loaf pans, split the cake batter equally between both loaf pans, then I crumble the streusel on top of each loaf pan (not in between). Dianna Marshall, COC
Jefferson’s WALDORFI don’t personally enjoy celery, however, it’s a must have in this recipe because it gives a different texture in contrast to the apples, walnuts and marshmallows. I just chop perhaps 3, 3 inch stalks, first in quarters length-wise and then at maybe 1/8 inch cubes and then it blends in easier. ~ A box of chopped dates has been difficult to find in stores of late, at least in Vermont, and at times, Gia has been the designated chopper and she hates that!! I would also say, I tend to use more whip cream and two fairly hefty tablespoons of Miracle Whip that makes the salad creamy and the mayo balances the sweetness of the dates and other fruits. This has been a family Howe tradition for years and a hit with the younger generation, nieces and nephews for every Christmas and Thanksgiving dinners since 1990. This is our inaugural recipe exchange cookbook from the CHRISTUS Health HIM Corporate Coding team. We wanted to put this book together so we could all share in our holiday recipe traditions. Additionally, with COVID restrictions over the past year, it's harder to get together. Since we’re remote, it’s also hard to do a potluck and share recipes, but we can still share!
