Chicken or Vegetarian Tortilla Soup
This recipe works well with or without chicken. To make a vegetarian version, just substitute vegetable broth for chicken broth and leave out the chicken. The flavor is surprisingly enjoyable for the few ingredients it uses. You can easily add additional vegetables such as corn, cabbage, etc., to add more substance. Don’t forget the garnishes!! They really help make the soup work.

Arepa (Spanish pronunciation: [aˈɾepa]) is a type of food made of corn dough, originating from the northern region of South America in pre-Columbian times, and is notable in the cuisines of Colombia and Venezuela. This is a continual battle between Venezuelans and Colombians. Each country claim it as their own typical dish. Arepas are not sandwiches, tortillas, gorditas or tamales, they are just Arepas. You can fill them in with whatever you want to, chicken, meat, turkey, cheese, avocado, guacamole, black beans. If you are a beginner, cheese and butter it’s a good way to start and then, once you are in love with the flavor you can use your imagination and make your own combination of different tastes. If you go to Venezuela or meet a Venezuelan, and you are offered an Arepa, it means you are important to that person and are welcome either to their family or it’s the start of a new friendship. You can find the dough at HEB, Target, Fiesta.

I was waiting in line to check out. The cashier must of seen my face, as I was unsure about the recipe I had found online for fried chicken. It was my first time making it. The cashier saw I had 14 spices on the conveyor belt. She asked me what I was making and I told her fried chicken. She said oh no, let me teach you an easy way. She gave me the ingredients and told me what to do. I have gotten so many compliments on it. I hope you enjoy it. I normally don’t measure, so these numbers are my guesstimates.

East Side King's Fried Brussels Sprouts
When I was a kid, my parents cut a deal with me. I got one "off vegetable" which meant that whenever this "off vegetable" was served, I did not have to eat it, but every other vegetable was fair game. I searched my brain for the thing I despised most, my mom's mushy boiled brussels sprouts that tasted as weird as they smelled. Being a small child, I didn't even take into account that Mom made brussels about once or twice a year. My brother made a smarter choice, broccoli, and got out of eating his "off vegetable" almost weekly. All this to say that for the longest time in my life, brussels sprouts were a huge no no. Flash forward to SXSW about a decade ago. My buddy told me I needed to try the brussels sprouts salad from this place called East Side King. I’d like to introduce to you a really good, really “meaty” and satisfying vegetarian chili that, in fact, does not have meat in it at all. This chili features a hearty mixture of walnuts, mushrooms, and carrots that can beautifully stand in place of your ground beef and absorbs the big flavors of sautéed onion and garlic, diced green chiles, and all those spices. When scooped and topped with some avocado or cheese, sour cream or tortilla chips, it’s just warming and so satisfying in that chili-specific way.
