WHEAT FREE ....OAT BRAN MUFFINS .

INGREDIENTS
  • 2& 1/4 cups Oat bran Cereal (Uncle toby’s blended to flour-like consistency in blender_)
  • Quarter cup chopped nuts
  • Quarter cup raisins/dates/currants or…your own choice
  • 1 tbsp baking powder
  • Quarter cup brown sugar or quarter cup honey or molasses
  • 1 and a quarter cups skim, evap or soy milk
  • 2 egg whites
  • 2 tbsp vegetable oil
DIRECTIONS
  1. Preheat oven to 220C
  2. Combine oats, nuts, raisins and liquid sweetener
  3. Mix oil, milk and egg whites together and add to oat mixture
  4. Line muffin tins with paper baking cups and fill with batter..or use silicon ones
  5. Bake 15 to 17 mins
  6. Test for doneness with a toothpick (should come out moist not wet)
  7. Store in a plastic bag..in frig if if not consumed within 3 days
