Sweet Potato Pone - Caribbean
  • 2 large sweet potatoes, (about 4 cups grated)
  • 2 cups low fat milk
  • 1/4 cup half and half
  • 1/2 pound low sodium butter
  • 3/4 cup brown sugar
  • 2 eggs
  • 1/2 teaspoon nutmeg
  • 1/8 teaspoon cloves
  • 1/4 teaspoon cinnamon
  • 1/2 cup nutmeats (we use walnuts)
  • juice of 1 small key lime
  1. Peel and grate sweet potatoes. In a medium bowl combine milk and half and half; add sweet potatoes so potatoes will not turn dark.
  2. In a seperate bowl, cream butter and sugar; combine with potatoes. Add remaining ingredients and pour mixture into a shallow baking dish. Bake at 350ºF for 30 minutes, then stir; continue baking until a light brown crust forms on top.
This delightful dessert comes from the beautiful Caribbean islands, and of course each island has their own version of Sweet Potato Pone. Sorry don't know from which island this recipe originated.
