Sour Cream Raisin Bars

INGREDIENTS
  • 1 cup butter
  • 1 cup brown sugar
  • 1-3/4 cups flour
  • 1-3/4 cups oatmeal
  • 1/2 teaspoon salt
  • 1 teaspoon soda
  • Filling:
  • 2 cups raisins
  • 3 eggs, slightly beaten
  • 2-1/2 tablespoons cornstarch
  • 1 cup sugar
  • 1 teaspoon cinnamon
  • 12 oz. sour cream
DIRECTIONS
  1. Mix butter, brown sugar, flour, oatmeal, salt and soda until crumbly.
  2. Press half in greased and floured 9x13 pan.
  3. Then in a heavy saucepan, over low heat, cook filling ingredients together until like gravy, 5 to 6 minutes.
  4. Do not scorch.
  5. Cool.
  6. Pour over crust; top with remaining oatmeal mixture.
  7. Bake 20 minutes at 350 degrees.
