Shrimp Salsa

INGREDIENTS
  • 1/3 pound frozen cooked shrimp, thawed
  • 1/4 cup chopped avocado
  • 3 Tbsp. chopped onion
  • 3 Tbsp. chopped tomato
  • 3 Tbsp. chopped radishes
  • 4 1/2 tsp. lime juice
  • 1 Tbsp. minced fresh cilantro or parsley
  • 2 tsp. chopped jalapeno pepper
  • 2 tsp. olive or vegetable oil
  • 1/4 tsp. salt
  • Dash of pepper
  • Tortilla chips
DIRECTIONS
  1. Cut shrimp into small pieces. Place in a bowl. Add the next 10 ingredients. Cover and refrigerate for at least 1 hour. Serve with tortilla chips.
