Shrimp & Feta with Angel Hair Pasta

INGREDIENTS
  • 8 oz. uncooked angel hair
  • 1 lb peeled & deveined shrimp
  • 1 pinch red pepper flakes
  • 1/4 C. olive oil, divided
  • 4 oz. crumbled feta cheese
  • 1/2 tsp minced garlic
  • 14 1/2 oz. can of undrained diced tomatoes
  • 1/4 C. dry white wine
  • 3/4 tsp dried basil
  • 1/2 tsp dried oregano
  • 1/4 tsp salt
  • 1/4 tsp black pepper
DIRECTIONS
  1. Cook pasta.
  2. Saute shrimp & red pepper flakes in 2 T olive oil for 1-2 minutes.
  3. Arrange shrimp in baking dish.
  4. Sprinkle with feta.
  5. Add remaining oil to skillet, saute garlic on low.
  6. Add tomatoes. Cook 1 minute.
  7. Stir in remaining ingredients.
  8. Simmer uncovered 10 minutes.
  9. Spoon tomato mixture over shrimp.
  10. Bake uncovered at 400 for 10 minutes.
  11. Serve over angel hair.
