Rosemary Roasted Tomatoes

INGREDIENTS
  • 1/4 cup flat leaf parsley
  • 1 tbs fresh rosemary chopped
  • 1 tbs olive oil
  • 3 tbs balsamic vinegar
  • 1/4 cup red wine
  • 2 tsp lemon rind grated
  • 1/2 tsp salt and pepper
  • 3 cloves of garlic minced
  • 5 lbs plum tomatoes quartered lengthwise
  • 1/3 cup grated parmesan
DIRECTIONS
  1. preheat oven to 400 degrees
  2. combine all ingredients in a large bowl, then transfer to a baking dish, and bake for 30 min stirring every 10 min ,remove from oven and preheat broiler, broil 10 min or until they begin to brown, remove from oven and stir gently.
  3. Garnish with parmesan

I love tomatoes so this is a great recipe for tomatoes, this can be a side dish or you could put it on toasted bagauette slices for an appetizer.
