Rice Pudding

INGREDIENTS
  • 3 EGGS
  • 2 CUPS MILK
  • 1/2 CUP SUGAR
  • 1/2 TEASP SALT
  • 1 TEASP VANILLA
  • 1-1/2 CUPS COOKED LONG-GRAIN RICE
  • 1/2 CUP RAISINS
  • CINNAMON
DIRECTIONS
  1. Pre-heat oven to 325F.
  2. In a large mixing bowl, whisk eggs, milk, sugar, salt, and vanilla. Stir in rice and raisins. Pour mixture in a casserole (11x7) and bake 20 minutes. Remove from oven and stir to combine ingredients. Sprinkle top of casserole liberally with cinnamon and return to oven for 20-25 minutes, or until a silver knife inserted near center comes out clean. Serve warm or cold topped with whipped cream.
