INGREDIENTS
  • 1 can black beans, drained
  • 1 can kernel corn, drained
  • 1 lb low fat ground beef
  • 1 cup onion, chopped
  • 2 cloves garlic, minced
  • 2 cups fresh dark greens, chopped (spinach, collards, kale, your choice)
  • 1 cup shredded cheese (your choice)
  • 1 tbsp olive oil
  • salt to taste
DIRECTIONS
  1. in a sauce pan, saute onions and garlic until onions are translucent. Add ground beef and brown. Make sure there are no large chunks.
  2. Drain meat and spread out in the bottom of a casserole dish.
  3. Add greens on top of the beef and then layer the black beans and corn. Cover with shredded cheese and bake in a 400deg oven until hot all the way through.
  4. Since everything is already cooked, this shouldn't take very long. Make sure not to burn the cheese.
  5. Serve with corn tortillas and salsa.
RECIPE BACKSTORY
This recipe could easily be made vegetarian by replacing ground beef with mushrooms and crumbled tofu.
