Potatoe and Broccoli

INGREDIENTS
  • 1 pound potatoes (diced bitesize)
  • 3 tbl vegetable oil
  • 4 tbl margarine/butter
  • 1 small finely chopped onion
  • 1 chopped red pepper
  • 8 oz broccoli florets
  • 1/2 tsp ginger
  • salt
  • pepper
DIRECTIONS
  1. Cook potatoes in skillet in oil for 7-8 minutes until browned and tender.
  2. Drain oil.
  3. Add butter, onion and red pepper. Cook for 2-3 minutes, stirring frequently.
  4. Add broccoli and ginger and cook 2-3 minutes. Stir frequently.
  5. Add salt and pepper to taste.
