Pork Chops with Brown Rice

INGREDIENTS
  • 4 to 6 thick pork chops
  • 2 tbsp. shortening
  • 2 tsp. salt
  • 1 cup uncooked rice
  • 1 can tomatoes
  • 1 cup water
  • 1/4 tsp. pepper
  • 1/2 cup chopped green pepper
  • 1/2 cup chopped onion
DIRECTIONS
  1. Brown pork chops in shortening. Season with 1 teaspoon of salt. Remove from pan.
  2. Brown uncooked rice in shortening, stirring constantly. Add tomatoes, water, seasoning, green pepper and onion. Lay browned pork chops on top of the rice mixture and cover. Simmer for 45 minutes
