Peter Paul Mound Cake

INGREDIENTS
  • 1/2 cup cocoa
  • 2 cups flour
  • 2 cups sugar
  • 1 tsp salt
  • 1 1/2 tsp soda
  • 3/4 tsp baking powder
  • 1/2 cup shortening
  • 3/4 cup milk
  • 1 tsp vanilla
  • 4 eggs
  • 1/2 cup milk
  • Filling:
  • Mix and cook until thick, about 30 minutes:
  • 3 cups angel flake coconut
  • 1 1/2 cups sugar
  • 1 1/2 cups milk
  • 1 1/4 tsp vanilla
  • Frosting:
  • 3/4 cup cocoa
  • 4 cups confectionery sugar
  • 1 stick butter, room temperature
  • 1/2 cup milk
  • 1 tsp vanilla
DIRECTIONS
  1. Sift dry ingredients together. Add shortening, 3/4 cup milk, and vanilla. Mix until flour is damp. Add eggs and remaining milk and beat well.
  2. Bake at 350 degrees in three 9-inch pans for 30 minutes. Cool. Split layers.
  3. While baking the cake, make the filling
  4. Mix well.
  5. Spread the tops of layers 1, 3 and 5 with the coconut filling. Frost the tops of layers 2, 4, and 6 and the sides of the cake with the frosting.

I had this cake in my recipe box for years before I tried it - big mistake. This cake is wonderful if you like chocolate and coconut!
