Pennsylvania Shoo-Fly Pie

  • Crust:
  • 1 9-inch deep-dish crust
  • Crumb mixture:
  • 2 Cups flour
  • 1/2 Cup packed brown sugar
  • 1/3 Cup butter, softened
  • Filling;
  • 1 Cup boiling water
  • 1 tsp. baking soda
  • 1/4 Cup plus 2 Tbls. molasses
DIRECTIONS
  1. Do not bake crust.
  2. Heat oven to 375 degrees.
  3. For crumb mixture, combine flour, brown
  4. sugar and butter in bowl.
  5. Mix until fine crumbs form.
  6. Reserve 1/2 Cup for topping.
  7. For liquid mixture, combine water and baking soda in large bowl.
  8. Stir until foamy.
  9. Add molasses.
  10. Stir well until foamy.
  11. Pour into unbaked pie crust.
  12. Add crumb mixture.
  13. Stir slightly until mixed.
  14. Sprinkle reserved 1/2 Cup crumbs on top.
  15. Bake for 45 - 55 minutes or until set.
  16. Do not overbake.
  17. Cool until warm or room temperature before serving.
