Pasta with Gorgonzola Cream Sauce

  • 1 lb Pasta(ie fettucine, tortellini, penne)
  • 3/4 cup plus 2 tablespoons dry white wine
  • 1 1/3 cups heavy cream
  • 1/2 lb gongonzola cheese
  • 1 tablespoon Parmesan freshly grated (plus more to top)
  • 1/8 teaspoon nutmeg
  • Fresh Cracked Pepper
DIRECTIONS
  1. In a large pan heat wine to a boil until it is reduced by one half. Reduce heat to low and then add cream until reduced by one-third(this should take about 10 minutes). Add the parmesan, gorgonzola, nutmeg and fresh ground pepper. Simmer until all the cheese is melted.
  2. Toss with cooked pasta and top with freshly garted parmesan.
  3. This is a superb sauce as it is. But here is my favorite variation:add cooked chicken, roasted garlic, chopped parsley
  4. and toasted pine nuts..it's divine!
